Winter is all about warm, comforting food.  My mom’s chili is a regular go-to on chilly (oddly enough, pun was not intended!) nights.  This recipe is incredibly simple, customizable, and delicious.  Got a family on the run?  Make this chili recipe in the crockpot – it always turns out great!  It also freezes well so double up on the recipe below to save for future use.

Mom’s Chili

Serves 6

  • 2 lbs. ground turkey
  • 1 tbsp. dried minced onion
  • salt and pepper to taste
  • 1 15 oz can pork n’ beans
  • 2 15oz cans chili beans
  • 1 15 oz can tomato sauce
  • 1 can tomato soup
  • 3 tbsp. chili powder
  • 1 tbsp. cumin

Favorite Add-ins:

  • diced sweet potatoes
  • chopped carrots
  • diced zucchini

Prepare large pot with non-stick spray.  Over medium-high heat, brown ground turkey and season with minced onion, salt, and pepper.  Once meat is cooked through, add remaining ingredients, cover, and allow to simmer over low-medium heat for at least 30 minutes.  If more time is available, reduce heat to low and allow to simmer, stirring occasionally, for 1-2 hours.

Note: If using crock-pot, first brown ground turkey in a skillet over medium-high heat.  Then add meat and all remaining ingredients to crock-pot and cook on low for at least 4 hours.  I typically leave the chili on low for 6-8 hours.
